If you can get the bag to vacuum properly then the bag dries the meat very well. It's just getting it to vacuum that proves difficult!

It's too early to tell if my meat curing project will be a success. However, thus far the UMAi product has worked as advertised. It was straightforward to use especially after viewing several of the instructional videos. So far, so good.

My first experience with Umai bags I made Bresaola. The results were good. Just ordered more and will be making Lonzino next. Expecting good results on that too. Just wish umai offered more choices of size and quantity of variety packs of bags. Need a better selection of variety packs of bags. That's the only disappointment for me.

So far so good with the bags. But they are really really expensive. $15 a bag is a tall price to pay. I am considering retailing them but they would have to come down in price for it to work.
