Please in the instructions for the bacteria say to not use boiled tap water if it contains Chloramine, which it often does, because that cannot be boiled out, so my first batch got all moldy. The second batch is 17 days in and looking good!

I have used U Mai bags and I like them a lot, because I can have them on my meat ager and I don t get any smell or any chance if cross contamination with any of the other meat

The process worked as promised. 17.8# of choice boneless ribeye shrank to 12.9# in 28 days. Lots of trimming produced 11 good steaks. No complaints other than I ruined the 1st bag trying to successfully seal it. My old seal-a-meal was most of the problem. Make sure to use a cooking rack for complete air circulation around the bottom of the meat and avoid using little form fridges which don’t circulate air. HIGHLY RECOMMEND.

After 15 years of making charcuterie as a hobbyist, decided to try Umai. Very difficult to get a good seal on the bag, despite using technique shown in video. Tried twice, using 2 bags (waste of money), and ended up settling for unsealed bag closed with rubber bands. Not optimal. In one month, my 4.3 lb coppa has lost 15% of its original weight, so perhaps it will turn out okay. But only time will tell and this wasn't a terrific beginning. I bought some beef bung casings to use as replacements for Umai if needed. Another expense. I am willing to keep trying with Umai, but the difficulty in getting a good seal and even a reasonable vacuum is a problem.

Well I would have to say that I was a little hesitant to try these but I figured I would give it a try. I used a 12.5 lb sirloin loin and it turned out wonderful. I did have one heck of a time trying to get the bag sealed. They are thicker than a vac bag and just don't seem to seal well with your average vac sealer. I would recommend ordering extra vacuum strips. I used 2 of them just to get one bag sealed. I says that you should have good ventilation around the bag if you put it in a refrigerator. I have a new refrigerator and it worked out but not to sure if you have and old one that it would work as good. I can see how people become frustrated using these but if you follow the directions you should have good success.
