The bags are great once you've practiced using them and figured out how to evacuate them completely. They do a wonderful job of aging beef, even up to 15 lb rib roasts. The biggest problem is the Food Saver device I bought, it's cumbersome and requires three hands and PhD to work quickly and properly. When the stars align, it will activate but its never been easy or automatic.

I'm giving a 5-star rating for UMAi DrybagSteak (Ribeye/Strip Loin) bags, not because the product is perfect but because the results are absolutely fantastic and relatively easy to achieve. I've yet to eat a steak at a steakhouse that rivals the tenderness and flavor I achieved right at home. Our local grocery store dry ages ribeyes, and while they're excellent quality, I can do even better for less than half the price -- including the cost of the bags!

To be successful, here are some tips:

1) Follow the instructions! Watch the videos on YouTube, too...
2) NEVER use an outside/garage fridge!
3) Two words: Sous Vide! You're welcome. :)

My success has come, I think, because I've watched every video I could find and followed the instructions exactly -- especially the warning to not use an outside/garage fridge!

If there was one improvement that would make the process even easier than it is, it would be for the bags to be a little more robust. For some reason, the last one I did, the bag sometimes melted all the way through if I did the double seal. Every sealer is going to be a little different, so just be careful about it. Even with the recent sealing challenges, that ribeye is now aging beautifully with the bag fused tightly to the meat. Just a few more weeks to aged perfection!

Bonus Tip: Don't throw away the desiccated trimmings! Instead, throw them in a pot of water with onion, carrots, celery and a couple of bay leaves. After 2-3 hours at a low boil, strain it, and you'll have a most excellent and flavorful broth to use immediately or save in the freezer for later. By doing this, you end up with very little actual waste from the aging process. You also increase the value obtained for the money spent and have even more delicious food to enjoy!

Tomorrow, I pick up a bone-in, lip-on ribeye from the butcher for the short loin bags coming in the mail. I simply can't wait...
