I have dry aged in my refrigerator before using older refrigerators that have better air circulation. The bag method works great and seams much more sanitary, especially if you share refrigerator space with other everyday items.

Great product. If you want to enjoy dry -aged steaks at home. All you need is the Umai bags and a food saver. Dry-aged NY Strip and Ribeye. They were great. Next, I plant on making some salami.

Bags are sometimes close to impossible to get to seal, but when they do, they work very well. I've done several rib primals, 21 and 25 days, one 30 day striploin and recently started charcuterie.
To be fair, I am not using the recommended sealer, so that may be a source of the sealing issues.
