I have dry aged several rib eye loins from 28-30 days with no problems. The bags are easy to use and produce a nice product. And I have recommended the product to a few friends.

Dear Sir,
I think UMAi Dry is fantastic and rate it very highly and would recommend it to anyone interested in charcuterie, except for the fact the shipping is crippling and makes it a very expensive product in the United Kingdom. Can I suggest you have a UK outlet (maybe a franchise or Amazon) that UK customers don’t have to pay the cost of shipping over the Atlantic.

I have tried dry aging steak, charcuterie (pancetta & capicola) and salumi (mettwurst & salami) all with great success. Everyone thinks I'm a genius but it is so easy and everyone loves it.
I highly recommend everyone gives this a go.

I've tried both the steak bags for Strip Loins and the Salumi bags. Very good success with the Strip Loin bags and I'm waiting to see how the Salumi I made turns out but it's progressing nicely. Using these products in a commercial location and they are impressive once I made the necessary adjustments for my equipment. Give it a try.

Good products. Recipes are great. I have personally made Sopressato Pricuito Capicola Lomo Chirzzo Venison and regular Salami The Brescola was also fantastic. My only complaint is shipping cost is to high in times where flat rate and free shipping are being offered by vendors. Old Italian sausage drying tip. I actually found out about UMAI by accident. After reading and watching the videos, I decided to dive in and give UMAi a try. My first dry age attempt was a complete success. The entire process was exactly what I had reviewed. No smell. No mess. Not hard to do and it's inexpensive. Totally love it! I will be using UMAI from now on. Thanks. John :)

The product that I made with the Umai Dry turned out very well. I would have given 5 stars but the bags were a bit hard to get sealed. Would be nice to have more sizes of bags to choose from. I dried pancetta, copicola and breasola. They all were very tasty even compared to expensive deli bought charcuterie. Will certainly make more!!
