Enjoyed the flavor a lot.
1st Time user.
Wasn’t sure how well UMAi Dry would work in a home fridge.
Did a 41 day aging process on a 16.5 lb ribeye.
Lost 2.5 lbs of moisture.
Trimmed off 6 lbs, but got 1 lb in bits and pieces for an awesome steak and eggs combo.
Carved 11 steaks from the 8 lbs of beautiful meat left.
Had very happy friends over.

Giving 4 *'s only because I ended up using 2 bags trying to get 1 primal sealed properly. I'm certain the issue was that I have an automatic FoodSaver vacuum sealer, which makes the process a bit more complicated and involved. Sure wish the bags were more suited for this type of sealer. Additionally I did all the research I could in advance of the "experiment". After the second round (bag) at getting my primal sealed all was fair with the universe. I only let things dry age for 28 days, but in my opinion the ribeye steaks this process produced was vastly superior to fresh from the store. I served up 12 people on my first experiment and everyone was a fan.
I'm going to give this another shot soon. This time I plan to double seal the open ends, and dry age for 45 to 48 days. I truly expect better results on my next venture.

UMAi method works well. Dry aged beef is the way to go. It will cost more as the product shrinks and you have to trim off the Bark once it is aged. A better final meat product. The only downside is it cost more.
