There is a learning curve to get all the air out of the bag, in order to get at least 80% of the bag to come into contact with the meat. I ruined the first bag. Other than that the bags performed as described. I made Capicola, and Bresaola. Both came out very good.

I wanted to wait until my beef was aged and cut up before I wrote my review. What an amazing product. My nose did indeed tell me all was fine, no smell at all. The bark was pretty tough, I recommend a really sharp knife, a butcher's cimiter is really best for it. In about a half hour I had removed the considerable bark; the short loin does lose a lot of weight, but is incredibly tender and soft. I cut them into 1 1/2" thick steaks, vacuum sealed them, and they are ready for a few to be cooked, the rest to be frozen. And excellent product, and I am happy to give it 5 stars.
